Mini–Irish Soda Breads

Soda bread is served at nearly every meal in Ireland, and every baker has his or her own version. Mine is based on my grandmother’s recipe and includes white whole-wheat flour (an easy-to-love, mild-tasting whole wheat), cold grated butter, buttermilk, and thyme. If you can’t find white whole-wheat flour, use equal parts of all-purpose and whole-wheat flours. Instead of baking this recipe as one large loaf, which takes an hour or more, I divvy up the batter into little rolls to expedite things

cup [110 g] cold unsalted butter

4 cups [540 g] white whole-wheat flour

1 tsp baking soda

1 tsp sea salt

cups [540 ml] buttermilk, plus 1 Tbsp for brushing

1 Tbsp chopped fresh thyme

2 Tbsp rolled oats

Preheat the oven to 400°F [200°C].

Line a baking sheet with parchment paper.

Grate the butter on the large holes of a box grater and place in the freezer while preparing the remaining ingredients.

In a large mixing bowl, whisk together the flour, baking soda, and salt.

Add the butter and rub it into the flour mixture with your fingertips until it is in tiny pieces.

cups [540 ml] buttermilk and thyme to the bowl and stir until they are just incorporated and the mixture comes together into a rough, shaggy dough; don’t overmix or the rolls will be tough.

Using an ice-cream scoop or

cup [80-ml] measure, scoop out 12 balls of dough and place them about 1 in [2.5 cm] apart on the prepared baking sheet.

Gently pat them into 2

- to 3-in [6- to 7.5-cm] rounds, brush with the remaining 1 Tbsp buttermilk, and sprinkle with the oats.

Bake until the rolls are golden brown and a skewer inserted into the center comes out clean, 20 to 25 minutes.

Let the breads cool on a wire rack for 5 to 10 minutes.

Serve the breads warm or at room temperature.

GET AHEAD:

Freeze the unbaked breads on a parchment-lined baking sheet until solid and then store in a zip-top plastic freezer bag for up to 3 months. Bake as many frozen rolls as needed at 400°F [200°C] on a parchment-lined baking sheet until golden brown, about 25 minutes.
